My coworker no shows but he’s my only co worker right now.

I'm a kitchen manager at a small brewry. My co worker has worked about 2-3 months longer than I have, but I have almost always been full time and have always worked in a kitchen. I love my coworker but he has been coming in late(sometimes 3-4hr) and no shows about every 2 weeks, usually a Friday or Saturday. He messaged me at almost 6am asking for the day off, his shift in 4.5 hr. Which the hours I work I did not wake up till an hour before he would start. I told him to work the m9rning till 2 (half day, I'd still work 9hr). He did not respond, and the server called me asking who was opening. I should have just gone there as I know whenever he 'asks' for the day off he will not respond or show up for that day. He did not show…

He did not show up, I worked 14.5 hr because of reservations. We also get over time at the end of a 40hr week, not the end of a 8hr shift(legal here).

I'm pretty mad, not gunna lie. I don't even make much more than him. I could probably ask but I know the biz suffered the last couple years, and they are about to renovate the kitchen due to me asking(ne have no hood vent and are am upstairs kitchen, with a house style glass top stove and flooring for looks and MAXIMUM SLIP FACTOR).

He also comes in WAY early on the slower Das, so I feel bad if all cleaning and prep is done, I leave early so he works. Lately I let him sit those 2 sometimes 3 hr in the staff room. I made the dhedual 2 weeks in advance, but he asks to open/come is early or shows up, then 4 days later he askes the day off or straight up does not come in.

Couple months ago he no showed 4 out of 5 shifts.

But I cant fire this dude because the only other hire we have right now is STRICTLY part time, she is working on a higher education job.

But im so ticked that I have to roll over and take it. So I'm reducing his hours. If he wants to work he has to come in for the house he was given and agreed to.

I'm going to cut his hours and work more, I am going on anniversary vacation soon(1st time off in 1.25 years), my boss boss told me to make sure he comes in when I'm on vacation lol. I'm hourly, I'll make lists, even order gfs when away if they cant(I trained them tho), but I litteraly cannot make him go to work if I'm miles away.

Has anyone had this kinda problem, kept the coworker and made it work? He is a good dude but I feel he is taking advantage of how clos3 I live and the fact I'm a manager, but he seems to try and make his own hours.

Also our work we text eachothwr alot, it's normal here, even if it's not else where. BUT, I only text him asking if I need to bring more product, or to ask if he wants to work sooner/later. I 2as sick with covid and he was texting me stuff like we are almost out of chips, how do I change the debit paper. I told him I litteraly can't leave the hous3, what do you want me to do? He said ask (the boss). I asked if he had her number, Luke I shared and told him if I'm sick and not getting paid I can't and won't answer messeges or calls. The boss was in the room beside him, he said he was afraid to ask. I litteraly mess3ged her HE needs stuff ask him please cuz he's scared for some reason.
