Situation as an employee in NY state

18 years old, NY state, just south of Rochester. I am a part-time employee at my college cafeteria, closing shift. I am sometimes kept past my scheduled clock-out time (11:45 PM), with pay (not qualifying for overtime). My employers claim that this is legal, they also claimed that they informed me upon hiring that closing time fluctuating is to be expected. However, I cannot find this in writing in the documents we are given upon hiring, and I do not remember being told this. I cannot find anything in the NY State labor laws or the Fair Labor Standards Act that addresses this type of scenario. Considering all this, can anyone tell me if what they are doing is legal or not? If you have sources for your information that would be great too. Not really a big deal overall but I just wanted to know my rights in this…
