Just quit after over a year of empty promises

I've been working as an Inventory Manager for a Marijuana shop in Washington. It's a heavily regulated market, and I was part of one of the busier stores in my county. The owners have 5 stores total in this state and each store has an inventory team of 2+. Except mines. I've been a one man team for over a year, and I tried my best to do it without complaint. As the store got busier I realized that I would not be able to keep up with the job. So I asked for help, not another full timer but just someone to help with the job on my days off. I've been a one man team for over a year, and I tried my best to do it without complaint. As the store got busier I realized that I would not be able to keep up with the job. So I asked for help, not another full timer but just someone to help with the job on my days off. I've been running the daily and monthly audits, updating every single sheet management gave us, learned every new process thrown at us without complaint, and even helped with rebuilding our training manuals when we changed to a brand new system that I had to self teach to use, all while being in control of our inventory and helping on the sales floor. I helped physically move the entire inventory when we moved stores and have put in my fair share of overtime making the store look as good as it does. When a team members got COVID I was there to work a split shifts and help close.

When my manager brought it up that I wanted help, he was told by the owners, their policy is $xxx,xxx amount of sales per FTE. Our store does 50% more than that amount but still not enough for a FTE, but all I asked for is someone to cover my 2 days off a week.

I've got an interview lined up in the same industry. The pay isn't as great but I'm not selling my physical and mental health and I get to work on a team and spread the responsibilities.

The owners have been out of country for over a year, enjoying the sunshine and beaches of Costa Rica. Fuck them and their vacation home.
