Am I making an error? UK law related

I find myself in an odd position with my current employer around contracts. The main issue is I was never given a contract to sign. I was handed a job offer and the terms of that and more have been met consistently throughout my 5 years at the company. I'm not too concerned about my lack of a contract as if you can prove that you've been working at a company without a contract for long enough employment rights still apply and my particular role would be pretty expensive to recruit for anyway so I feel safe. The problem now comes that I'm fielding calls from recruiters and taking interviews. I've been telling interviewers that I “only” need to give 1 months notice (3 months is common in my industry). Now I believe I could actually get away with giving 1 week, but I think if I say that to a prospective employer it would shock them. Shock them to the point of potentially putting them off.

Then it would be nice to get that pay rise within a week…
