How can I formally and professionally tell my boss that I no longer feel comfortable working two jobs for the price of one?

Recently I have been having to work two of the busiest posts at my job by myself at the same time and it happens several times a week. They tried to make it easier by removing some of my duties while I am by myself but it doesn’t help at all since both posts can be pretty fast paced. I am officially fed up and feel like I am being taken advantage of. I do actually like my job and I don’t want to leave but I am the only employee that has to do this because of my schedule and it happens on the busiest shifts several times a week due to being understaffed. I want to write an email stating that I’m no longer comfortable working like this but I want to be as professional as possible and cover all my bases. I’m trying not to come off…
