AITA for skipping out on an interview?

So basically I got an interview with this popular coffee shop in DTLA. I was super excited until they told me I would have a 30-40 min verbal interview then after that I would have a 1-hr “working-interview”. I’ve worked many food service jobs and have never heard of this. Basically after my interview they would have me go behind the counter and work a 1 hour shift (no compensation!!) then they will judge if they should hire me?? I totally skipped out on the interview and never contacted them again. For a food service job, I don’t think it’s appropriate. EDIT: position was cashier/barista.
