How to start organizing

I could use advice on steering my workplace toward better conditions. Can this forum help? I just started working for a place that has had mad turnover the last couple years. It’s a high end artisan mom& pop operation that apparently has a long history of asking too much of people, paying too little despite the bosses apparent wealth, not following labor laws, not providing safe work environment. They pay me $18/hr with no benefits. I had a hell of a time finding a part time job that fit my skills, so I’m trying to figure out if I should hang on and try to steer it better, and if so how. I just started working for a place that has had mad turnover the last couple years. It’s a high end artisan mom& pop operation that apparently has a long history of asking too much of people, paying too little despite the bosses apparent wealth, not following labor laws, not providing safe work environment.

I’m only working a few days a week but suddenly I’m one of the most senior employees. I’m definitely a decade or two older than most new hires.. I recently asked for a review & it was glowing. I asked where they see my future with the company, and that they seem to be positioning me like a manager. Oh no, they denied that up and down. I’m an anchor for younger employees who mentors and delegates. It was infuriating tbh.
I asked for a raise and they’re “thinking about it”. It really feels like they’re asking managerial level stuff from me but don’t want to pay me manager $, so if I can use that influence over new hires wisely, maybe we could work together?

I’d love advice because I feel like the more I know about this place, the worse it gets. Is it even worth trying to make it work? I could use objectivity. Thanks for any advice you can offer.
