Manager just offered me a serving job but without tips

This is my first time as a server. The offer was that the tips are pooled and I would only get 25% of my share until I could prove myself, then I get 50%. After that I’d need to open and close the shop and do bookkeeping to get 75% and a written exam is 100% after 5 months. How fucked is this?
