A large chunk of my earnings are not being payed out to me every paycheck. My vehicle cost reimbursement is being TAXED. My tips are being taxed much more than my hourly (that I don’t even get paid)

I work as a Jimmy Johns delivery driver. It is breaking down my car FAST (terrible pothole and bump ridden roads, many hundreds of starts and stops per week) and I did the math on the maintenance reimbursement amounts (which are taxed…wtf) and even with my car getting 60mpg delivering, it barely covers gas. Its supposed to cover all vehicle related costs, since drivers use their own vehicles. I have been scouring my paystubs, and found that every two weeks, Jimmy Johns is not paying me my hourly on the road wage, OR (because it randomly switches) doesn't pay me my “in-shop” hourly wages. I have also done the math on the tip payout, and there is a separate tax specifically for tips, which are in a significantly higher % rate! I am working so much I don't have the energy to look for a new job (or do the car repairs I need to do myself because the entire revenue from this job since I started doesn't cover the parts and labor for a fraction of the repairs I need at a shop) or look for a new place to live (which I can't afford anyways)

What do I do? What can I do? This job costs me money, assuming I'm maintaining my vehicle, which I haven't been, because I need, you know, money for meager living expenses.

Can I unionize? Can I at least get my unpaid wages?

Oh, and I have an extraordinarily difficult time finding employment, because I have a theft felony and misdemeanor on my record still from 2016
