Asked to work without pay

I have been looking for a new job. I have multiple offers and accepted one even though it was less money, because it was a better work/life balance for my family. I told them I have a 30 day notice period so I can't start until next month. I also asked if we could arrange a trip to their HQ to get ramped up. The send me a “welcome” email where they propose I start sooner with the threat that if I start next month, insurance won't kick in until the following month. Then they offer to have me do the trip next week…while I'm still working for someone else and not getting paid by them. Immediately retracted my signed offer letter and told them I'm not going to violate my employment agreement, work without pay, or forgo health insurance. And then people wonder why we “don't want to work”.
