Boss edited an email??

Need advice. Not sure this is the right sun but here goes. Been mostly staying out of some drama between manager and my lead and coworkers. I have a new job lined up, but it’s in the same industry. Manager has connections, been in the industry 30 years and im afraid of retaliation even after I’m gone cuz she knows people so I’ve stayed quiet. She retires this year so I figured I could wait her out, but it got so bad I found another job. Just have to ride it out a couple weeks. But stuff is coming to a head with the other parties. HR might be calling me to substantiate their claims as I had email evidence of a lie the manager told (one of many). I have a recording of her verbalizing the lie as well -unfortunately not the rest because my phone glitched out. Anyway,…

Been mostly staying out of some drama between manager and my lead and coworkers. I have a new job lined up, but it’s in the same industry. Manager has connections, been in the industry 30 years and im afraid of retaliation even after I’m gone cuz she knows people so I’ve stayed quiet. She retires this year so I figured I could wait her out, but it got so bad I found another job. Just have to ride it out a couple weeks. But stuff is coming to a head with the other parties. I have a recording of her verbalizing the lie as well -unfortunately not the rest because my phone glitched out. Anyway, I just went to forward the email to myself and it’s changed. No longer contains the lie or any awknowledgement of that part of my original email she was replying to. Is it possible to edit an already sent and read email in outlook? Im worried im losing my mind even though I know she’s a master manipulator. Also, if it is possible she did that, is there a way for me to track back and view those edits to get the original?

I was so close to getting out relatively unscathed. I don’t want to lie to protect my own behind when HR calls and throw them under the bus, but without that physical hard evidence I don’t know what else I can do. I always have my phone on record around her now, and I will not talk to her or hr over the phone, only in person cause you never know who else is in the room. And she’s found integrity hotline calls about her before and retaliated against people -the only thing in our/their favor is her HR buddy just retired and the new guy has no history with the company. Also, her boss doesn’t like her either just can’t find a paper trail. Any ideas what else I can do to protect myself and them?
