Do I move or accept a counter?

Not sure if this is the right sub for this question but I’m interested in what people think so here goes. I’m relatively happy with my current employer, my job isn’t too taxing and I believe I am paid fairly. Recently a former colleague contacted me about a job working with him. Other details aside, the job would pay a good amount more (approx 35%) for similar work albeit with more travelling involved and some more responsibility. I believe they could offer further career development in the future where as the job I have now is relatively static due to the small team. The question; I’m sure that my current employer would be keen to keep me and would likely counter offer, I’m not sure they’d match the pay rise exactly but I think I could get a decent bump at least. The question; I’m sure that my current employer would be keen to keep me and would likely counter offer, I’m not sure they’d match the pay rise exactly but I think I could get a decent bump at least. I’ve seen it said before that you shouldn’t accept a counter offer, as it shows that your employer could have paid you more but didn’t want to until you forced them to. In my case I think I am paid fairly already for what I do so it would be me forcing them. I’m also worried about the possible residual resentment if I did stay after accepting a counter.

I’ve not had a formal offer from the new place yet, they want me to meet some other people on Monday first, so I’ve still got time to mull it over.

What do you lot think?

If it matters I’m in the UK, so harder to just fire me if they do get upset.
