Doing another person’s job?

Hi everyone. So I work at a small pie shop in Canada, we have had a dish washer since I've worked here (Oct 2020) our current dish washer who does all of our trays is leaving in the middle of this month. We are NOT hiring a new one until the “busy” season starts in September. I work at the front of house area where we get busy and barely have time for our tasks sometimes.
We are now expected to wash trays.
I do have to say that sometimes we are not as busy and DO have time to do it, but we were not asked if it was okay or given more money to be taking on this extra task.
We had a meeting last August about a different issue and took the chance to see if it was our job to wash trays and the owner said no.
So I'm not sure what to do, should I bring up the meeting last year to the owner? Should I ask my manager again about it? Should we ask for more money temporarily as we are doing another person's job?
