How come I have to submit my meal penalties when my old restaurant did it for me?

So I work for a retail store and I forgot to take my lunches before the 5 hour mark. I just learned how to submit meal penalty sheets and I guess I didn't get them for a couple of my old paystubs. I was told it's too late to submit for the old paystubs but I just wanted to know if I should be aware of anything else while working? From now on forward I'm checking all my hours are correct before the week ends and before I clock out now lol
