I think my work might be shutting down – what can I do to protect myself

I have worked for a non-profit over the last year, and it went from it being a dream job to watching an utter collapse and mass exodus over the last couple of months. It's no longer the great team of colleagues I started with, and I'm honestly wondering if the org might consider closing. I have been applying and interviewing over the last month, so am hoping to jump ship sooner than later, but I'm wondering if there are any protective measures I can take in the meantime if they org does close while I'm job hunting. I have been fortunate enough to build up a decent emergency savings, but what other measures have people taken in this kind of position?
