Less than 8 hours between shifts

I have a job in CA where I would be scheduled 3-11:00pm but then scheduled 730am-5pm. They call this the clopen (close-open) shift. Many times I will have to work till 1 or 2 am on the evening shift but be expected to return to work at 7:30 am. This results in only 5 hours between shifts. My boss has explained that because we rolled past midnight it doesnt entitle me to any overtime. I am working 16 hours in a 24 hour period but not entitled to OT? Is it legal to even schedule shifts with only an 8 hour gap? If this doesnt make enough sense, please ask questions. BTW I work in the ski industry witch has super goofy labor laws.
