My companies retention policy is absolutely whack

Start of this year I decided to go to Canada from the ME to get higher education. I informed my company in January that I will leave by the end of the year. Back in March of this year I got an offer which was 50% more than my pay, I brought it to my Manager who said they will match it. Time goes on and in May they tell me they will increase it by a 100%. Until comes August, where they say since I am leaving at the end of the year they can't increase my salary and I gave in my 2 weeks notice, because I would rather have no job than be screwed over more. Back in March of this year I got an offer which was 50% more than my pay, I brought it to my Manager who said they will match it. Time goes on and in May they tell me they will increase it by a 100%. Until comes August, where they say since I am leaving at the end of the year they can't increase my salary and I gave in my 2 weeks notice, because I would rather have no job than be screwed over more. I had no backup job in hand and no easy way to get one and it is a big leap of faith, but for me its simple : I dont have a job, but you dont have an employee either.

All of this was with prior notice that things would go this way, but my company wanted to bluff me like it was a game of poker. I take care of 3 roles (e-commerce, marketing, data analytics). Interestingly from that point on wards they have hired someone for marketing at 5x my pay. They are looking for someone for e-commerce with a budget of 3x my pay. and Finally for data analytics, which is approximately 15 hours of work a month, they are ready to pay me 80% of my current monthly pay if I work as a freelancer. They have no one to train them, they have no one to take over responsibilities immediately.

We had another round of negotiations where I offered to stay an extra 3 months and do a proper training and handover. To which I was met with an extra 25% as bonus on my current and that's it. The company is still trying to negotiate from a position of power knowing they are going to get screwed in the short term.

I started job hunting and I am not sitting on two job offers doubling my current pay which i can start from next month + working freelance for my current company for an hour every 2 days and I will be making more money than I would have ever if I stayed at my current company.
