My coworker is my reason for quitting

I travel around my city at whatever location I’m needed. One location I go to has a bad manager. I get sent there for a week every other moth or so. Everyone knows he sucks at his job, but his boss loves him. His boss is my boss’s boss. This guy and I have had our petty disagreements. He’s an ignorant, power-hungry pawn in middle management who handsomed and sweet-talked his way into his position. He doesn’t know my role, but 40% of his role is to do my role. One time when I was at his location there was a problem. I tried to explain the problem, but he couldn’t understand the problem and he kept cutting me off when I tried to explain the problem. One time when I was at his location there was a problem. I tried to explain the problem, but he couldn’t understand the problem and he kept cutting me off when I tried to explain the problem. This kept heightening to the point he asked if I needed to leave for the day. He does not have the power to excuse me, only my boss does. I said, I guess I do need to leave. I left early by 3 hours.
I later found out he was nominally disciplined for these actions and that my boss fought hard to keep me from disciplinary actions. I am unable to move up in the company bc of this, though. My boss told me I could not be trained in the coming quarters as I thought I could be bc of this manager’s claims about me.
I have set up interviews and have a few promising jobs lined up.
In my exit interview, how do I fuck this man’s life up? I know they’ll ask why I’m leaving. This man’s behavior and management’s reaction to it is why I’m leaving. How do I cause problems?
