Why do you not just show up as required after getting the demand in writing- then call the health inspector and report the violation? Then notify your boss of the violation and report in writing. Seems like if enough bosses get in trouble for obviously endangering the public, they might stop asking. And at the least, they can’t say you were non-compliant and also send you home. Or retaliate after a report.
