Quitting my job over email.

So I have worked at this local restaurant job for 4 years now without health insurance, pto, and can never use sick hours (for reference, whenever I told my boss I was sick I had to provide a doctors note or most recently a Covid test from Walgreens or cvs) without having proof of me being sick. I want to quit because I found a side job that pays more for the time being (which is sad) and have an interview on Monday for another job that has pto and good benefits. The restaurant was recently closed for 2 weeks and it set me back financially really bad. And right at the end of those two weeks I had Covid (still have it when posting this). I want to quit but can’t see my boss in person, should I write an email or just text them?
