Should I reevaluate my new job after my 6-month probation?

I started a new job a month ago as a restaurant manager for a golf course. The job was posted as 55k to 75k salary plus benefits after 6 months. When the job was offered to me it was stated in my contract that I will make 45k salary based on 40hr work week plus being included in the tip pool if I serve. I was thrown off at the change of salary from the job post to contract, but I decided to take the job as I was in need of a change of my current career.

I've been working in this position for about a month now it's been so demanding that I put in 60+hrs a week. I've barely served and only made about $300 in tips for the month. To say the least, I am not very pleased about how much I am making for the amount of work and hours I have to contribute. For example, a full time server working 40hrs a week is making $15/hr and collecting about 1k in tips a week is making more than me.

I decided to take some downtime to rest so I took off 2 days. The first day my boss was messaging me to price out something as he needed to make changes immediately online. I told him I was tied up since it was my day off and he didn't respond to me. I continued to get 5+ emails asking me to complete tasks that required it being complete by the end of day. So my first day off was me doing admin work at home in between making best of my day off. The second day my boss called me thanking me for doing the tasks on my day off and continues to tell me that I won't be able to take 2 days off come the summer time since the golf course will be so busy. That kind of put a damper on my outlook on this job, I was promised flexibility when it was offered to me and now I'm being told I can only take one day off a week come summer.

I am fully committed to this job, but I feel like I should be earning more for the time and workload I am handling. I obviously won't bring this up since I just started, but was wondering if I should approach the owners after my 6 month probation? If I present them a case that hiring me was beneficial for their business I think I can persuade them to give me a raise. I am enjoying my time at this job, but the work hours are a little to demanding to me for the amount I make.
