What’s the motivation for me to keep taking on the workloads of people who are leaving? What if I simply refuse?

I’ve been at my current job just over a year and the turnover is wild. We’ve lost like 8 people in the last year. Every time someone leaves, I’m forced to take on some of their old workload with zero incentive or compensation, not even as much as a lousy gift card or even a thank you. So serious question, what’s the alternative? What’s an exit strategy that doesn’t involve this unfair process? And can I just start refusing the extra work? TIA!
