Why aren’t we taking a longer look at worker cooperatives?

With the massive amount of turbulence in the labor market and high levels of underemployment, why aren’t more workers considering starting cooperatives as an alternative to working for the someone else? A driver-owned Uber or Lyft would make total sense. The reason there aren’t enough drivers is because the company barely pays you when you factor in all the overhead as a driver.
