ridiculous menu, ridiculous expectations

My boss and GM wants us ( myself and the head chef) to execute a menu with 52 dishes. All of which need some assembly, it also does not include desserts. The menu size increased from 25 to 52 items over the weekend. They are not planning on hiring additional staff. I'm expected handle half the menu in a tiny kitchen with one window and one stove and a microwave. I'm going to quit.
