Question on manipulative behaviour

I recently moved jobs and have been in my current role for 4 months. The boss is new and joined after I did. She kinda seems nice and projects herself as being a team player, positivity/confidence coach etc. when it comes to work she keeps sending emails non stop for simple things that could be said over the phone. Non stop TEAMS messages as well. She told me to approach her if I have any difficulties with the work. There were occasions that were overwhelming and loaded with work which she got onto us by accepting tasks that don’t even relate to my team. It’s become so bad that I don’t even get to go to the bathroom. I get a ping on Teams . During a 1:1 she asked me how I was and I said I’m feeling pressured and swamped with work. Non stop TEAMS messages as well. She told me to approach her if I have any difficulties with the work. It’s become so bad that I don’t even get to go to the bathroom. I get a ping on Teams . During a 1:1 she asked me how I was and I said I’m feeling pressured and swamped with work. Her demeanour changed and she said ‘Ok, I know you’re new but this company isn’t like where you come from. We work hard and pushing back isn’t good. If you plan your work you can get things done. These are just excuses.’ I was shocked. First thing first, she was the one who asked me to approach her when I had difficulties and to be transparent with the work load. When I say that I’m over loaded she gets defensive and changes her tone. Isn’t this manipulative behaviour? She asks me to take notes for her meeting where I don’t even have anything to contribute. Asks me to not attend them infront of the big boss but later sends me a Teams msg to attend. This behaviour is very annoying and confusing. What can I do?
