Just got a new job at a small recently opened family owned restaurant. They still seem to be figuring out the business aspect of things… should I be concerned?

I'm going in for my first day of training today. They haven't said anything about papers, the ones you usually sign during the hiring process. Did not have an application sheet, are hiring me at minimum wage, no tips during training, then minimum wage with tips after training, and after that they said they will review my progress every month to see if I need a raise. They said no breaks on weekends but an hour break every day during the week (for part timers! I've never gotten an hour break even on an 8 hour shift.) They also said free food, mentioned no slip shoes but it seemed more like a suggestion. They said I should have a servsafe, at least. Which I do. I've just been tossed around and taken advantage of enough times, they seem very nice but I'm cautious and wary.
