Jack of all Trades?

So I work for a nonprofit and when I was hired I was explained that me job is an admin position. Move forward 6 months and I have gone from working 6 days in a row, 14 hours days, doing physical activities and constantly being present with no breaks. To days where I sit at my desk and do absolutely nothing for weeks on end. Recently, one of my co workers has decided that I can do anything, so I have now turned into maintenance, housekeeping, and personal assistant. I am getting pretty fed up with it. I also have been told that when winter comes I will be working 5 to 6 days in a row, 14 hours days, no breaks, on call at night, every week starting in January going till end of march. I honestly do not think I will be able to handle it. I have brought up my concerns and the response is “This is what you signed up for” ummmm no I signed up for an admin position not camp counselor, maintenance, housekeeping, chef, personal assistant, and whatever else they decide I need to be that day.

6 months seems like a short time to be at a jobs and feel would look bad on me to leave so early but I honestly pretty fed up. Advice?
