Am I being paid legally?

I’m a long time lurker, but I’m in need of some legal advice regarding labor laws. I work in a shop that serves beverages in Illinois as it’s “manager”. I set hours, oversee employees, and work in the store alongside them. I usually work 60+ hour weeks with no days off for multiple weeks in a row. The owners have said that I am “salaried” for a certain amount each week, but they change the amount they pay me based on hours worked (e.g. 40 hours = 600, 50 hours = 800, etc.). Under Illinois law, this qualifies me as an hourly employee. Are they allowed to change my base hourly pay each week so that the “salaried” amount is equivalent to the hourly rate with overtime included?
