My trial shift at a petrol station

This happened a number of years ago whilst I was a student but this subreddit has reminded me of this situation. As a cash strapped student I was looking for typical crappy service job to bring in some extra money to help with my studies. I applied to my local petrol station as a kiosk assistant and was invited to come in for a trial shift. He then proceeded to say that employees are liable for stolen fuel and that wages are docked to make up for the loss of earnings. How is that allowed? Kiosk assistants have no chance of stopping…

How is that allowed? Kiosk assistants have no chance of stopping people driving off without paying, especially as it is common for customers to pay in their car using mobile apps.

For the record, this was an Esso petrol station in England.

Edit: Unsurprisingly I did not take the job
