My boss told us we’re doing 10 hour days now

I started a garden nursery job a few weeks ago. I've loved it so far. I used to farm as a living before the pandemic so being outside is amazing for my soul. Anyway, the only issue is my boss. She's lovely enough but very serious. She gets on our ass about speeding up things constantly. Now, I used to work 60 hour weeks farming- I know how to do hard work and do it sustainably to prevent burn out. But she expects us to be “superstars”. Anyway the main issue is the other day I was told instead of 8-4:30 we have to work 7-5:30. This is apparently because we're so many weeks behind where we should be (which is not anyones fault but hers). So she just casually brings this up during the morning meeting, no question if we're okay with it- just expectation. I was pretty flabbergasted.…

I was pretty flabbergasted. I signed up for 3 day work week/24 hours a week. I did not sign up for this. I have health issues and that's why I'm only doing 3 days. I don't know how to bring this up to her- she's a very no nonsense/serious person. I might be able to get a doctors note but I shouldn't have to!

As you can see I'm pretty pissed and I would love to get some advice on how to approach this. I'm already walking 7 miles a day just working there, with those extra 2 hours I might burn out.

Help?
