Management wants to prevent me from resigning

I’m so sick of my job, I feel so demotivated and waking up feels like a chore. For context, I’m 28 and I’ve been in this company and this sales role for close to 2 years, with a total working experience of 4 years. The pay is great but the constant grind sucks the joy out of my life. I work 8 hours a day, 5 days a week and though that might not seem like a lot, those 8 hours are extremely intense and condensed. I tendered my resignation letter last Tuesday but until today my management have yet to escalate it and intends on retaining me. Last Friday my boss spoke to me and tried to convince me to stay for a 1 month paid sabbatical (this would be my second sabbatical, I had a month of paid break in October last year) and to give him a final answer today. He asked how much more money should they pay me to convince me to stay. I reiterated that I want to resign today but he told me to hold my decision while he flies in to speak to my in person (I am about 2 hours flight away from him) and he will be coming here on Wednesday.

The last choice I have is to direct the resignation to HR but it will surely jeopardise our professional relationship as he will definitely have to answer to HR on this. What should I do?
