Should I look for a new and quit my current job?

I've been working in a popular pubs kitchen in the UK for almost two years now. It's not been too bad, the people are nice (some took much more getting used to than others) and the pay is better than most my age get. For just under a year, I've been pretty much the main guy for closing the kitchen (cleaning the not-so-hot equipment and doing some paperwork etc.). I've kind of gotten into the groove of it and just see it as part of my life. It also makes my normal day shifts even better, because I don't need to stay until 11pm. I remember when I was first put on closes I was asked if I would be up for doing overnight shifts (prepping meat and stuff). I said sure, but it never came to anything because they hired a new guy for it. But when asked about opening the kitchen, I said no. I had done a few morning shifts at that time and it is horrendous.

Recently, I was put on my first open shift with the kitchen manager. I hated every second of it and asked if it's a one time thing. He said no and he wants me trained incase I'm needed. After the shift I asked him if he could lay off the opens for me, I'm not the biggest fan of doing them. Turns out I've got 3 more this coming week and I'm on my own for 4 hours each time.

I've been thinking about quitting and looking for a new job anyway, and it honestly feels like they just use me.
