Boss paid me too much one time, but also is frequently late and unprofessional with paychecks

So the titles a little weird. Where I work at it's super regular that our boss doesn't pay us on time and even his checks will bounce. Checks never have a set day. It's suppose to be Friday's but then he won't show up till Monday. That turned into Tuesday. Which currently has turned into anywhere between Tuesday and Friday we will get paid. Often in our work group chat We get promised to be paid one day (he says he'll have them in the morning or late at night) and he frequently tells us that he's been busy or he's stressed out and tired. Postponing paychecks to the next day or two is so common. Recently a couple of my checks have even bounced. It is a locally owned place. It is a locally owned place. He's also been in the process of closing the location down to open a new one in a better spot. I can understand with the current hectic nature of moving a whole restaurant things can slip. However He's been using that as a crutch lately. Cause it doesn't change that this has been ongoing way before he even started this.

To make it worse sometimes he forgets to sign them or when I've waited days for my check , the date on them is for like three days to a week in the future.

Also it's common for payment to be incorrect, hours missing. Wages wrong.

Recently I finally got my check. As of current everyone is pretty much laid off as the old location has closed and he's setting up the new building. So being out of work this last check had to be stretched in between jobs. And unemployment

When I got my check the amount was more than I anticipated and I was over the moon. I questioned the high value and I was told by my manager it was because he combined our last three weeks of work.

I used this money like I had this money. I paid off some long awaited debt. Filled my fridge up. Bills. Took myself out to one dinner with friends (only spent 30$) . And still had a pretty decent amount to sit on.

Until I woke up to see the check had bounced again. I messaged him about it and sent him pictures of the returned deposit. He started questioning the amount and then informed me it was incorrectly written and i had about three hundred over what my actual check was.

This was only a problem because I spent that money like I had extra money. Taking care of long due things and getting long desired goods and necessities for my home

He gave me my “correct check amount” didn't pay the overdraft or check return fee and completely ignored my panic.

I know I can't technically do anything. He can take the money back but I practically spent 30$ shy of my whole check because I thought I had the safety to do so. I could coast on a cool 350 in between cause everything was paid and set. But now I have 40$ in my account and I just hate this sort of low down insecure amount.

I don't know. I can't change it just gotta keep living frugal I guess. Just kind of feels like a slap in the face especially when I expressed my anxiety. I wish he would have just given me the whole amount and then taken it back in chunks on my future paychecks. Is that so much to ask for?

Even if I am bad with my money let's say it's not my fault he paid me wrong.
