Boss Pretends I Resign and Then Takes Vacation When Payment Paperwork is Due

I started working at a job in the food industry late in May. I was having difficulty finding jobs with hours but this one gave me enough hours and a decent pay for my area. Flash forward to Friday. I still forget to do the paperwork and I come in with a minor injury to my hand, it is painful enough to make working difficult and the pain got worse the more I worked. I asked my co workers if they cared if I went home because I can't hold anything (which is important in a kitchen). They were all cool with it. I texted my manager to let him know (probably my biggest mistake) and he just hit me with the guilt trip of leaving my co workers alone. They all told me they don't care lol. He also said I needed to get a doctor's note, to which I responded that the company should pay for my visit or give me insurance if they ask that. I also called him out for the fact he doesn't pay his employees fairly, as one co worker was talking about her extremely low wages ($300 check for two 30+ hour weeks) in the morning. He proceeded to text me “I accept your resignation” claiming I resigned and then he guilt tripped my co worker by texting her that I had quit because she discussed wages.

The next day which was Saturday I came in to drop off my paperwork. Only to find out the manager left to go on vacation that morning. Leaving the place with nobody to put my paperwork in and make sure I get paid. AND I have to go back in to provide my state ID and social security.

The worst part of this was the paycheck was supposed to help me pay for my electric bill that is on the verge of being shut off as I was waiting for rental and utility assistance. My electric company will not wait and now I am dealing with literal wage theft. I don't know what to do and I'm kinda scared.

Any advice is appreciated. I came from an abusive family and was re-abused by my partner's family before we cut them out. My mental state is fragile and this just sucks.

Edit:

I have the texts where my manager claimed that I resigned and a screenshot of him guit tripping the other co-worker. As well as co-workers that witnessed this.
