Closing shifts and getting things ready for morning staff

I work at a cinema doing closing shifts, typically with one other person, usually rostered on till 10 or 11PM. We have a checklist of things we need to do to close the building and things we need to get ready for the morning staff. Recently, we have been understaffed at night and it's taken us an extra 30-45 minutes to complete even the BASICS of the task sheet. Here is where my dilemma lies: we are quite close with those who work mornings and don't want to make their work any harder, yet, we are often required to do way more work than we're rostered on for (paid, of course). Do we just leave after the clock hits 11 and let the unfinished tasks creep into our next night shift when morning is unable to complete all of their requirements? I am definitely going to speak to my manager…

I am definitely going to speak to my manager about putting extra staff on but like all good things, Covid's affected the probability of that happening.

Some advice would be greatly appreciated as feel like I'm stuck between creating problems for myself by not getting everything done and also getting home at a reasonable hour.
