Current job making employees pay for errors?

I’m just curious if this is legal. My current job is in the food industry as a bartender/manager. the owners are enforcing a new rule that if any food is accidentally rang incorrectly, the server must pay for it. This just seems scummy to me??? it would be different if it were a five dollar burger but our dishes generally range from $20-$40. additionally I was told that when I manage if the register/safe is low on money then it is my responsibility to pay it back. I have worked for this company for a really long time but these just seem like major red flags… is this actually legal??
