How do I convince my significant other to tell their manager they can’t work weekends without advanced notice.

My SO has been with a company for a few years and in their time there the company has experienced rapid growth which has led to my SO being promoted several times to their current position. They're currently in a low-ish level management position that's salaried instead of their previous positions that were hourly. In addition to my SO's regular day to day duties they also manage the company's after hours line. Today (sunday) a employee who is specifically designated to work the line on weekends sent my SO and my SO's boss a text at 6am saying they had a medical emergency that was going to prevent them from working the after hours line. I would describe my SO as hard working but some one who gets anxious and scared of telling their boss no or confronting her boss about a raise. My SO did recently asked for a salary increase to compensate for all the extra work they do outside of regular business hours but their boss basically told them that their hands are tied by upper management and they can't increase their salary at this time.

Thankfully my SO is actively looking for other jobs but she doesn't want to burn any bridges so that they can use their current employer as a reference. How do I convince my SO that it's ok to push back and tell her boss that they can't keep working weekends with no advanced notice like this? Had it been me I probably wouldn't have responded and later told my boss that I was camping with no cell service but I don't work in her position so maybe that would have been a poor move and burned a bridge she needs to keep.

My SO if very upset but she's sucking it up. Personally I'm livid because it's not fair to me and it's certainly not to fair to them. I told my SO that she needs to tell their boss that in the future she needs to at least be compensated for the canceled plans but she doesn't seem to think that's a good idea either.
