How to confront a manager who admitted that they have PMDD and lashes out randomly for no reason

I am the only person at my place of work who works alongside this person. They are a rollercoaster of emotions all day. I can't question this person as they get incredibly defensive. They are the only manager I report to. They say they can't do their job without me, but they constantly lash out, only to apologize hours later. Mental illness is the only reason why they act like this, and it is incredibly draining.
