I was a line cook but have been hustling for a couple months and it’s going ok?

How do I account for my money so Uncle Sam wouldn’t knock on my door or I can prove how much I make? To later get apartment or loans or whatever. I make gummies, buy and sell stuff, want to start selling boujee cat trees. What are other good ideas to make money on my own time? I don’t want to go back to the restaurant industry, I’d pretty much rather die at this point
