Impossible to prove discrimination for not being hired.

I've been searching for a new job recently and have had several offers (didn't take them because most were below what I currently make and on top of that I am already underpaid). But I noticed that for some reason I decided to be honest at some point by checking the disability box, as some common issues are considered disability (IBS, Depression, Anxiety, etc). After that switch, I stopped even getting interviews. A few days ago on three separate applications, I either said no or “i do not wish to disclose” and within the day have an interview for all three. I reccomend you never admit you have a disability until you are hired, and just use plausible deniability like these companies do. Equal opportunity employer my ass.
