Income verification

I have been in a very fortunate situation where I had a great landlord who charged us cheap rent. Now the building has been taken over and we have to leave. I'm disabled and my partner's income is off the books. We can “afford” a new place but how the hell do we get that income on paper for applications? Any help with this is much appreciated.
