Insane wage expectations

We’re getting some masonry work done at our place. We hired a local company, small business for the project. Dude is out here doing the work solo. We’re BS-ing and he said he’s offered as much as $25/hr for zero experience labor jobs (mixing mortar, carrying stone). People have countered w/ $50/hr. I.e $100k/yr. That’s more than the business owner’s post tax income. Isn’t this kind of unrealistic hurting what we’re fighting for?
