is threatening to quit a good idea atm ?

this is in UK, IT job so with inflation rate I feel like my current pay/pay raise was laughable… my department is severally under staffed atm, some other have quit and we currently unsuccessfully looking for replacement…. if I go to an interview with another company, get a job offer in writing with £5K higher pay then what my current pay is. and ask current company to match or else … what are the odds of them folding and giving me extra 5K ? and what's the down side of doing this and then not changing jobs even if they say no ?… (I do like the job (its low stress), just want more money) I'm like to quit sooner or later, just for me personally this isn't grat time to change jobs, but with staff shortage it's the best time to threaten to quit.
