Job based Reality TV in the US

Recently I've been watching these shows like Kitchen Nightmares or Bar Rescue from the US and they got me thinking about worker exploitation. I'm not sure how much say, if any, workers have on appearing in these shows. I admit that I'm also ignorant of the laws protecting them, but these programs feel very distasteful. Certainly, it can be entertaining and often the owners are painted in a bad light but many other times workers are publicly shamed on TV or even fired. It seems to me that the blame should be directed at the management and owners directly for poor worker control or low morale. Shaming the worker seems misguided.
