Looking to get out – how do I go about timing my 2 weeks and taking advantage of accrued paid time off?

The title sums up my question for the most part, but I'll give more context. Started out at a tech sales company about a year ago. I immediately took on a lot of responsibility and became a knowledgeable and trusting employee for my bosses. Would come in if they needed me, switch shifts with co workers, help out if other departments needed a hand. At the start I had basically full time hours but I was paid as a part time employee without benefits or time off. I got a promotion pretty quickly which included an abysmal raise for the added responsibility. (that's the common theme for every post on here it seems) Now I want out. Things have always been rocky staff wise but recently everything has gone downhill. We've lost numerous long term employees that were very knowledgeable. Our team used to be around 10, now it's 6…

Our team used to be around 10, now it's 6 including 2 trainees. I am one of two employees that knows how to do things properly and the other is looking to leave by the first week of August. I have been scheduled for overtime without notice, sudden inconsistent scheduling and very little support. The two trainees were approved 2-3 weeks of time off leaving 4 of us to run things. I'm simply done. Overworked, underpaid, understaffed and under supported. How do I go about cashing out my accrued sick days, personal days etc.? I want to use them but I also want to put in my 2 weeks notice to at least give some courtesy. Do I book time off then when it's approved put in my 2 weeks and take the sick days for the other days until it's 2 weeks? I probably have enough combined for 6-7 days off. I'd really appreciate some advice here, thanks.
