My boss is an extreme micromanager workaholic. Am I being unreasonable wanting to quit?

Here’s some context: I started this job a year and a half ago and was super excited to use my degree (even though it’s a retail job). I worked hard and got promoted to assistant manager within the first 8 months. Now, I feel like I’m expected to give 110% everyday and am getting extremely burnt out, and my manager makes me feel crazy and like I have to walk on eggshells. For example, I was told the amount of post-it notes I left around the store was annoying (I left 2 on the register that day) and the next day I asked her if it was okay to write one and put it on a small unfinished project I was working on…never have I felt so micromanaged to the point where I feel like I have to ask permission to write a fucking post it note. She’s constantly complaining…

She’s constantly complaining that she can’t keep up with the amount of work that’s required of her and said that if she wasn’t so organized the place would fail without her oversight. Needless to say, I’ve felt very under appreciated lately (especially because she’s constantly late and taking days off to catch up on her side gigs, and therefore I’ve been working extra). I worked seven days in a row last week and was asked to come in today-the start of my weekend.
One of our best employees put in her two weeks about a week ago, while she was recovering from covid. She asked for this week off months ago because her family was coming into town. I was asked by my boss to ask her availability for this week (even though the schedule was made to accommodate her vacation time.) When the employee said she was going to continue her vacation time, my boss was a little upset because “she only had a fever and basically got a mini vacation” when she got covid and my boss said that “if it were her, she’d tell her family she couldn’t come on vacation because she made a commitment to work”…… this level of workaholism isn’t healthy and it’s starting to wear everyone down, me especially. She’s been like this for as long as I’ve known her, and it seems to be getting worse (like staying past close and working overnight until the openers come in at 9:30…)
sorry if it seems like I’m rambling, but I could go on and on. I feel fucking crazy for having to accommodate to this. At this point, I’d rather just work at a less mentally taxing job and make more money, like a grocery store. Thanks if you’ve read this far into my vent. I’d just like some validation that this is unreasonable behavior because I feel insane for dealing with this for a year and a half lol.
