My bosses are giving me unrealistic workloads to set me up for write ups, how do I respond?

I want to quit, so bad, but at this very moment I can’t. I’ve complained about this company a lot on Reddit. I’m over them. They’re financially failing and are likely going to be bankrupt. They’re entrepreneurs who lucked out during covid but this recession is destroying them because they are actual idiots. I’m the only one that knows about it because I’m the only one who handles their financials. With that, I’m also the highest paid person in the office. They cannot afford to pay me anymore. They’ve already cut my hours IN HALF. Now, they increased my workload working half my normal hours, literally setting me up for failure. I’ve never gotten written up in the last two years and this month, the month my hours were cut, I’ve gotten two performance write ups. Living in an at-will state there’s not much I can do legally. Living in an at-will state there’s not much I can do legally. What should I do?

ETA: I’ve been applying/ interviewing and I’m hopeful about a recent interview but until I get something in writing I’m not depending on it.
