Please help: Being poisoned by industrial work camp

I’m a construction worker at a remote industrial work camp housing approximately 5000 workers. Recently, management decided to cut costs by switching from a behind-the-glass serving buffet to to an open-buffet. We are all getting sick with GI infections – the kind that are spread by infected fecal germs getting into the food – due to contaminated serving tongs constantly sliding down into the tray. Many complaints have been made to safety and management, and reports filed with the regional food safety branch, but nothing is changing. I want to quit but I really need this job. The union representatives say it’s a losing battle. Other than quitting, what else can be done about it?
