Pretty sure my previous employer is bad mouthing me despite being “at-will” to prospective employers. I need help navigating this

I quit my last job abruptly because I was sick of their shit and it was during the pandemic when I had to take care of my kids who couldn't attend school. I was also in peoples homes who of course didn't mask up, so I was concerned for my safety. Being an “at-will” workplace this is my right, just like its their right to fire me abruptly with no cause*. From my understanding they can only confirm I worked there to prospective employers and can't offer any other information. Is this correct? The reason I suspect this, is I am looking for jobs as an entry level lab technician that have low requirements yet I have a bachelors in biology with a chemistry minor. According to their requirements I am overqualified.

I was thinking of calling them up to ask why I am not being considered in the hopes of bolstering my resume to be considered for the job. I'm in a 2 party consent state for recording so it would be kinda awkward to mention I am recording. Email would be the obvious way to go for evidence but I have a feeling I wouldn't be emailed back. I have the time and resources to bring legal action against my previous employer. I would rather just move on and get a new job though. Leaving out my previous employer on my resume would create a big gap because I was a stay at home parent before that.

Basically I feel like I'm un-hireable because I was/am the primary parent. Big gap in the resume and then when I finally got back into the workforce the Pandemic started which killed my mental health and exhausted me from taking care of my kids. Of course all of this wouldn't be an issue if child-care was affordable. I would have gladly worked part-time with kids in child-care but the numbers/money made that impossible.
