Question about non-competes when working in trade

So I'm exiting my company. I work in the office for a licensed trade (electrical, plumbing, etc). I've heard that they make the techs sign a non-compete (not sure if they made me sign one when I started 2 years ago). But all the plumbers are still plumbers and go to work at other plumbing companies in town when they quit or are fired. So what does the non -compete do? And if they try to bring up my non-compete, what exactly are they trying to say? I won't answer phones in an office again? My role changed since I started but I haven't signed anything since the beginning. Will they make me try to sign something when I leave? I am going to a similar business but in a managerial role, not answering phones like here. I am following a few former employees but when they mention their non-competes,…

I am going to a similar business but in a managerial role, not answering phones like here. I am following a few former employees but when they mention their non-competes, it's in a job offer way. Like they can't directly offer me a job so I have to go to their boss.
